Born in Yorkshire in the UK, owner and Head Chef of The Hutch, Craig Edmond spent a year travelling around Australia in 1994 and was determined to return and, eventually, open his own restaurant.

Craig's career began at Scarborough College where he gained his qualifications. He then worked in a number of prestigious restaurants, including the famous St Andrew’s Old Course Hotel in Scotland, learning his trade from top chefs and gaining experience. In 1996 he took over as Head Chef at the up market Bistro 21 in Durham City and during Craig’s time there Bistro 21 was named the top bistro in the UK.

On his arrival in Australia in 2000 Craig first worked at Prime and Post restaurants in Sydney's  GPO building before becoming Head Chef at the Grand National Restaurant and Pub in Paddington. He, and his wife Emma, relocated to Brisbane in 2004. Working at the Storey Bridge Hotel,  Cha Cha Char and Harvey’s helped Craig gain a deeper understanding of Brisbane's food and tastes.
